Indulge in the rich and delightful flavors of Tiramisu with a twist! Kim's Tiramisu Cupcakes are a perfect blend of coffee, cocoa, and mascarpone cheese, all packed into a convenient cupcake form. These moist and flavorful treats are sure to satisfy your sweet cravings.
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- 1/4 cup brewed espresso or strong coffee, cooled
- 1/4 cup Kahla or coffee liqueur
- 1/4 cup cocoa powder
- 8 oz mascarpone cheese, softened
- 1/2 cup powdered sugar
- 1 tsp instant espresso powder
- 1/2 cup heavy cream
- Cocoa powder for dusting
- Chocolate shavings for garnish
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with cupcake liners
In a bowl, whisk together the flour, baking powder, and salt
Set aside
In another bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs one at a time, mixing well after each addition
Stir in the vanilla extract
Gradually add the dry ingredients and the milk, alternating between them, starting and ending with the dry ingredients
Mix until just combined
In a small bowl, combine the brewed espresso and Kahla
In a separate bowl, sift the cocoa powder
Divide the cupcake batter evenly into the prepared muffin tin
Add 1 tsp of the espresso-Kahla mixture to each cupcake and swirl it with a toothpick to incorporate the flavors
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean
Let the cupcakes cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely
In the meantime, prepare the tiramisu frosting
In a mixing bowl, beat the mascarpone cheese, powdered sugar, and instant espresso powder until smooth and creamy
In a separate bowl, whip the heavy cream until stiff peaks form
Gently fold the whipped cream into the mascarpone mixture until well combined
Once the cupcakes are completely cool, pipe or spread the tiramisu frosting on top of each cupcake
Dust the cupcakes with cocoa powder and garnish with chocolate shavings
Chill the cupcakes in the refrigerator for at least 30 minutes before serving to allow the flavors to meld
